A little info about Broccoli
In a research published in the Journal of Food Science,was presented how different oils for cooking affect the nutritional value of broccoli.
For the purpose of research, they were fried a little longer than 3 minutes in different types of oils like refined olive oil, extra virgin olive oil, peanut oil, soybean oil and sunflower oil.
Then it`s nutritional composition was compared with the composition of raw broccoli.
The results showed that peanut butter oil helps to keep the composition of polyphenols, and extra virgin olive oil and sunflower oil to help maintain vitamin C. Cooking with different types of oils, doesn`t changes the presence of minerals at all.
Therefore, when cooking the broccoli, the best way is to use extra virgin olive oil or peanut oil.
To increase the activity of substances contained, which are fighting against cancer, you need to chop the broccoli into smaller pieces, sprinkle them with lemon juice and leave it stand for 5 minutes before cooking.

– 3 slices rye bread
– celery root cream
– broccoli cream
– 1 carrot
– 2 broccoli florets
– 2 pickles
– 1 round celery root
– 1 lettuce leaf
– Put the carrot, a round of celery root and broccoli on the steam for 3 minutes to soften.
– Cut slices of bread into triangles.
– Put the cream of broccoli and cream of celery on the slice of bread. Moister one side of the slice of bread with broccoli the other side with celery cream.
– Put the rounds of carrot and pickles and crescents of celery root and lettuce leaf between the slices of the sandwich.
